The story

Zigni is the uncontested crown jewel of Eritrean festive dining (Madi), served communally over spongy injera (taita). The culinary technique is defined by 'kundo'—a prolonged, patient dry-sweating of large quantities of pureed red onions without fat until their sugars caramelize and break down into a velvet puree. Only then are authentic Asmara-style berbere and spiced clarified butter (tesmi) introduced to construct an unmatched depth of heat and savory intensity.
