The story

Originating among the Ouled Naïl confederation in the semi-arid steppes of M'Sila, Zviti is a fiercely spicy winter staple eaten communally straight from a tall cedar mortar. Prepared to fortify workers and travelers against bitter high-plateau desert cold, it embodies pure communal sharing where diners eat shoulder-to-shoulder with wooden spoons. Technically, pounding boiling-hot flatbread directly into freshly charred, steaming vegetables inside the dense wood mortar emulsifies vegetable waters and olive oil into a dense, saucy paste without stock.
