The story

Rooted deeply in the cultural life of the Iteso people of Eastern and Northern Uganda, ajon is an ancient ceremonial brew shared to celebrate good harvests, solemnize weddings, and seal peaceful reconciliations. Drinkers traditionally sit in an unbroken circle around a large shared clay pot known as an emulitu, sipping through long hollow reed straws called ebigor fitted with woven fiber filters at the bottom. The core technical secret is the preparation of atap, a slow-roasted fermented millet dough that develops complex smoky tones and lactic depth through anaerobic maturation before brewing.
