Waragi (Pot-Distilled Banana and Cassava Spirit)
A legendary distilled Ugandan moonshine crafted from a fermented mash of ripe brewing bananas and roasted cassava flour.
The story
Known nationwide across Uganda, Waragi originated from 'war gin', a spirit popularized among colonial soldiers and local distillers during social gatherings and rites of passage. Today it is sipped neat during milestone celebrations, weddings, and evening socialization around community centers. Traditionally fermented using sweet Cavendish or Ndizi bananas mixed with toasted cassava flour (muwogo), the wash relies on the natural wild yeasts from banana skins and roasted starch to generate high-ester aromatic precursors prior to single-run alembic pot distillation.
