The story
Hailing from the West Nile region of Uganda, Angara is a cherished staple among the Lugbara and Alur communities along Lake Albert and the Albert Nile. The fish (Alestes baremoze) is heavily dry-salted and split open to cure under the equatorial sun, concentrating its umami profile. Traditionally served alongside kuon anang (firm cassava and millet bread) at communal midday meals, preparing Angara requires a precise desalted parboil so that the cured flesh perfumes the aromatic tomato broth without overwhelming it with sodium.
