The story
Across Central and Eastern Uganda, particularly within the Buganda and Busoga kingdoms, Binyebwa represents the daily soul of household dining. The sauce is traditionally made by milling lightly roasted, red-skinned raw peanuts on a granite grinding stone into a fine, aromatic meal before gently simmering it with wild mushrooms (butiko) or river fish. In classical Baganda culinary practice, the sauce is sealed inside steamed banana leaf parcels (luwombo style) to concentrate aromas and prevent the delicate groundnut oils from scorching over direct embers.
