The story

In the Central Buganda kingdom of Uganda, emisusa is revered as one of the most delicate leafy delicacies, traditionally prepared for honorable family lunches and served alongside steamed matooke and rich binyebwa sauce. The dish requires intricate traditional patience: every single leaf stalk and dorsal leaf vein must be manually peeled to strip away the prickly, stringy outer fibers that would otherwise spoil the silky mouthfeel. Unlike harsher wild greens, properly prepped pumpkin foliage takes on an unctuous, velvety texture when gently steamed over low ember heat.
