The story

Hailing from the northern Tigray region and neighboring Eritrea, Ambasha is a celebratory, mildly sweet leavened flatbread served at weddings, christenings, and Sunday family gatherings. The bread is historically recognized by its distinctive wheel-and-spoke decorative scoring, which symbolizes the sun or a cartwheel and facilitates even heat penetration on a heavy clay mitad or cast-iron skillet. The dough is traditionally perfumed with ground korerima, crushed fenugreek seeds, and a touch of ginger before being pan-baked slowly until a golden, brittle crust forms.
