The story
Prepared by the Batswana across all southern and central districts, Bogobe jwa Lerotse is the quintessential ceremonial dish served at traditional weddings (patlo) and major feasts. The star component is the indigenous lerotse melon (Citrullus caffer), a non-sweet, orange-fleshed fruit that imparts a delicate botanical acidity when slowly cooked down. Traditional village cooks rely on a traditional four-pronged wooden whisk called a lehetho to aerate the simmering melon before folding in sorghum flour and cultured sour milk, giving the finished porridge its famous salmon-tinted hue.
