The story

Kabubu is an essential riverine specialty perfected by Hambukushu and Bayei fisherfolk residing alongside the perennial waterways of the Okavango Delta and Chobe River. Prepared predominantly during the low-water dry season when bumper catches from woven reed baskets are split and sun-cured on riverbank racks, it sustains villages through leaner months. The authentic technique relies on rehydrating the intensely savory fish in boiling water before searing, allowing the fish's natural natural oils to create a rich, emulsified sauce.
