The story

In the pastoral rangelands of northern and central Somalia, nomadic herders transform surplus evening milk into Burcad, an unaged curd cheese that provides essential protein during drought cycles. It is classically prepared at dawn and served in shallow wooden bowls alongside warm canjeero (fermented flatbread) or boiled sorghum porridge.
