The story

Developed by inland Somali pastoralists traversing the arid central rangelands, oodkac was an essential survival ration packed into woven wooden gourds called haan. It is traditionally presented in ornate containers during aroos (weddings) and served to honored guests alongside fresh canjeero or sweet spiced tea. The extraordinary longevity of the meat relies on total moisture extraction followed by complete lipid immersion, a preservation technique perfected centuries before mechanical refrigeration.
