The story
Across the mainland Rio Muni rainforest and among Fang households, Chichanga serves as the non-negotiable daily carbohydrate accompanying rich wild bushmeat and peanut stews. The cassava undergoes submerged water fermentation (retting) for three to four days to soften the fibres and purge cyanogenic glucosides before being worked into a smooth dough. Technically, the elasticity of authentic chichanga relies on pre-gelatinising a small portion of the raw fermented starch over heat—a step known as 'cauterising' the paste—before bundling it tightly into leaves.
