The story
Prepared across the island of Bioko and within coastal Ndowe communities, this opulent preserve is reserved for Christmas festivities and patron saint feast days. It reflects the centuries-long cultural exchange between Afro-Iberian culinary traditions and the rich tropical bounty of the Gulf of Guinea. Soaking the raw green papaya shreds in water or a light lime brine beforehand firms the pectin structure, preventing the fruit from disintegrating during its lengthy reduction into glassy, translucent ribbons.
