Chimukuyu ne Dovi (Cured Biltong Beef in Peanut Butter Sauce)
Salt-cured sun-dried beef rehydrated and braised in an unctuous, rich roasted peanut sauce served alongside piping hot sadza.
The story
Favored in the semi-arid rural cattle-rearing provinces of Masvingo and the Midlands, chimukuyu ne dovi sustained pastoral communities throughout the dry winter months when fresh slaughter was restricted. Historically, beef was salted, air-dried on wire racks over mopane wood smoke, and stored in granaries before being re-tenderized in simmering water. A crucial technical detail is using traditional stone-ground, unsweetened peanut butter containing natural oils, which allows the sauce to emulsify without splitting into a greasy film.
