The story

Prepared across eastern and central Zimbabwe, derere serves as a rapid, nourishing daily side relish engineered specifically to lubricate dense cornmeal sadza. Traditionally cooked over an open hearth in clay pots, it is prized by Shona families for its smooth, mucilaginous texture which facilitates effortless eating. Scientifically, the controlled addition of bicarbonate of soda alters the pH, breaking down pectin rapidly while preserving the vibrant chlorophyll color of the okra pods.
