The story
Prepared widely across the highland regions of Ethiopia, Dulet is traditionally cooked in the early morning immediately following the slaughter of livestock during holidays like Meskel. Because organ meats spoil rapidly, this dish historically tested the butchery finesse and knife skills of village cooks who chopped warm offal to a fine mince within minutes. The inclusion of mitmita—a piquant blend of bird's eye chilies, cardamom, and cloves—acts both as a preservative seasoning and a palate-awakening kick.
