The story

In Krio society of Freetown and the Western Area Peninsula, homemade ginger beer is an indispensable fixture of formal celebrations, weddings, and 'komojade' (outdooring/naming ceremonies). Unlike commercial soft drinks, traditional Sierra Leonean ginger beer is fiercely hot, deeply spiced, and subjected to a short warm fermentation using baker's yeast or wild starter to develop natural prickle on the tongue. Historians trace the recipe to 19th-century Liberated African and Nova Scotian settlers who fused British colonial brewed-beverage techniques with indigenous high-potency African rhizomes.
