The story

Originating among the Mende and Temne peoples of Sierra Leone, Grannat Soup is an essential centerpiece for communal Sunday gatherings and festive weekend celebrations. The dish balances the richness of smooth roasted groundnut paste with the deep, pungent umami of wood-smoked coastal fish. Traditional cooks intentionally temper the groundnut base in seasoned broth off the high flame to prevent the natural oils from prematurely separating and scorching against the pot base.
