The story
In Zimbabwean Shona and Ndebele culinary tradition (where it is known respectively as guru ne matumbu or ezangaphakathi), offal dishes take pride of place during family gatherings, lobola celebrations, and cattle slaughters. Far from being scrap meat, tripe and intestines are prized for their textural contrast between velvety honeycomb and tender casing. The key technique lies in multiple washings with salt and mild acid followed by a long, gentle braise in its own rendered fats until the gaminess softens into rich umami.
