The story

Originating along the Swahili coast from Mombasa to the Lamu Archipelago, Kahawa Chungu is the defining drink of late afternoon baraza gatherings where community elders convene to converse and play bao. Unlike its sweet counterpart Kahawa Tamu, this concentrated decoction is intentionally unsweetened to stimulate digestion, traditionally enjoyed alongside sweet Swahili halwa or dates. A key technical nuance lies in the prolonged, low-heat decoction in a tall conical brass kettle (birika), which allows the volatile spice oils to fully emulsify with the dark coffee solids without scorching.
