The story
Originating among the Hausa and Dioula trading networks of northern Côte d'Ivoire, Kankankan is the defining seasoning for outdoor meat vendors known as dibiteries or choukouya stalls. Eaten throughout the day and evening sprinkled generously over grilled mutton, beef, or chicken, it delivers an instant hit of umami and heat. Authentic Kankankan traditionally relies on defatted peanut press-cake (kuli-kuli) or deeply dry-roasted peanuts pulverized with whole dry spices rather than raw nut meal to prevent clumping and rancidity during ambient tropical storage.
