The story
Throughout Mande households in southwestern Mali, kanyah (often transliterated as kani) holds a revered status as an artisanal confectionery gifted during traditional wedding festivities and child-naming ceremonies. Historically prepared by dry-parching mature field corn kernels over hot sand or cast iron, the grain is pounded alongside oil-rich roasted groundnuts in deep hardwood mortars. The technical magic of authentic kanyah relies entirely on friction: pounding releases the inherent oils of the peanuts just enough to bind the powdery roasted corn and sugar without adding a single drop of liquid water.
