The story
Originating from Mande and Voltaic culinary traditions across southern Mali, soumbala is the foundational flavor profile of Sahelian savory cookery, serving as the ancestral ancestor to industrial bouillon cubes. Prepared collectively by specialist women elders during the dry season, the harvested seeds of the néré tree (Parkia biglobosa) undergo intense multi-day alkaline fermentation driven by Bacillus subtilis strains. The resulting paste develops an intense glutamic complexity and pungent aroma that deeply enriches long-simmered sauces such as fakoye and tigadèguèna.
