The story

Originating among the Teke plateau communities and widely savoured in Brazzaville, this dense, earthy green stew is an indispensable centerpiece of family midday meals alongside fermented chikwangue. Wild koko (Gnetum africanum) leaves are hand-gathered from primary rainforest undergrowth and sliced into razor-thin threads using ancestral slicing techniques. Because raw gnetum leaves possess tough, fibrous vascular structures, they must be pre-softened with prolonged simmering or a pinch of vegetable ash (potash) to break down cellulose before cooking in rich unrefined palm oil.
