Krain Krain (Savory Jute Leaf Stew with Smoked Fish)
Silky, finely chopped jute leaves simmered with aromatic smoked fish, palm oil, and dried crayfish into a rich, mucilaginous classic.
The story
A staple across Temne and Krio households, Krain Krain (also known as ewedu or molokhia in other African regions) is a cornerstone of everyday family lunches and dinners. It is traditionally served atop mounds of parboiled rice or eaten alongside fufu on communal platters. A foundational technical rule in Sierra Leonean kitchens is adding a tiny pinch of edible potash (kawe) or baking soda to soften the jute fibers instantly and lock in their brilliant emerald green hue.
