The story

Mabuyu is the iconic street snack of Mombasa, Malindi, and Lamu, hawked in clear polythene sachets outside school gates, bus termini, and dhow docks. Coastal vendors transform dry, fibrous seeds harvested from the ancient African baobab tree into prized confectionery through precise sugar crystallization. A subtle splash of rose water and food coloring distinguishes coastal batches, which are deliberately cooked just past soft-ball stage to achieve a chalky yet crunchy shell.
