The story

Among the Batswana pastoralist communities of the Central District and Kweneng, madila is the quintessential dairy preserve born from the abundant milk of indigenous Tswana cattle. It is served daily alongside hot bogobe jwa lerotse or crumbly phuthu porridge to cool the palate during midday meals. Traditionally fermented inside cured leather pouches (lekuka) or earthenware vessels, the fermentation relies on naturally occurring lactic acid bacteria and ambient temperatures to cleanly separate whey from protein-dense curds.
