The story

Melktert has been an enduring cornerstone of Afrikaner confectionery culture since the 17th century, perfected in Cape Dutch farm kitchens for Sunday afternoon tea and church bazaars (basaar). Descending from medieval Dutch mattentaart, the recipe evolved in the Cape to feature local cinnamon, farm-fresh full-cream cow milk, and a tender pâte sablée pastry. A hallmark of master baking is achieving a delicate wobble in the custard center upon slicing without the crust weeping or becoming soggy.
