The story
Forged in the rugged wilderness by Voortrekkers and refined across generations of Afrikaner farmers, potjiekos is the centerpiece of leisurely outdoor gatherings and weekend camping. Cooked exclusively in a rounded, three-legged cast-iron potjie over faint wood embers, the cardinal rule of potjie-making is that once the layers of meat and vegetables are placed, the dish must never be stirred. This vertical layering technique creates micro-climatic steam zones within the pot, where dense root vegetables gently braise while delicate squashes steam in meat-scented, wine-infused vapor without disintegrating into mush.
