The story

Traced back to early trekboers and farm workers crossing the vast Cape interior, roosterkoek (literally 'grill cake') was developed as a rapid leavened bread that required no oven. Today, it is an indispensable element of South African braai culture, traditionally torn open hot and smothered in farm butter, apricot jam, or cheese. A key technical requirement is maintaining a stiff dough with relatively low hydration so the dough squares support their own weight without sagging through the grill grid.
