The story

The wild greens carry an intense, characteristic herbal bitterness that traditional cooks carefully temper by pairing them with milder wild amaranth. Historically and technically, the practice of simmering the parboiled greens in full-fat fresh milk or clabbered farm cream not only softens tough vegetable oxalates but also solubilises fat-soluble vitamins for wholesome nourishment.
