The story

Morogo wa dinawa is an indispensable winter relish throughout Botswana, prepared when summer's fresh leafy greens are no longer available. Batswana women harvest tender cowpea leaves in autumn, steam them into balls, and sun-dry them into preserved bricks known as morogo wa dintshane. Technically, dried cowpea greens contain concentrated oxalic acids and tough structural fibers, requiring a dedicated preliminary blanching step to tenderize the foliage and unlock its deep, earthy mineral flavors.
