In the rice-growing heartland of Nkhotakota and throughout Northern Malawi, Mpunga wa Mtedza is the crowning centerpiece for communal celebrations and honoring special guests. Combining aromatic local Kilombero long-grain rice with stone-pounded raw red groundnuts, this dish reflects the agricultural synergy between lake basin rice paddies and inland peanut fields. Crucially, the groundnut flour is whisked into boiling liquid to emulsify its natural oils, cooking out the raw legume starch before introducing the grains.
