The story
Deeply woven into both Shona and Ndebele pastoral culture, mukaka wakakora (or amasi in isiNdebele) represents pastoral hospitality, traditionally shared from a communal earthenware vessel called a hodzeko or a dried calabash gourd. It is consumed alongside or directly ladled over steaming hot sadza reupfu (stiff maize porridge), where the thermal contrast between blistering pap and chilled, tart curd creates a revered culinary pairing. Technically, traditional fermentation relies on indigenous lactic acid bacteria (predominantly Lactococcus and Leuconostoc species) naturally resident on the porous unglazed interior of the clay gourd, which outcompetes spoilage organisms without artificial rennet. The watery whey (mutuvi) is drained off through a small bottom peg in the calabash to yield thick, spoonable curds.
