The story

Originating among the Kikuyu people inhabiting the fertile volcanic slopes of Mount Kenya, mukimo is the definitive centerpiece for ruracio dowry negotiations, weddings, and celebratory family feasts. Traditionally mashed using a curved wooden pestle known as a mwiko wa mukimo, the dish showcases the agricultural wealth of the homestead by uniting four harvest staples in one pot. Culinary lore dictates that the pumpkin leaves must be stripped of their fibrous strings and blanched quickly to retain an intense chlorophyll green before being pounded into the hot potatoes.
