Mursik (Fermented Milk Aged in Smoked Gourds)
A traditional Kalenjin fermented whole milk aged inside a soot-treated Senetwet gourd, yielding a distinct smoky tang and thick texture.
The story
Deep in Kenya's Great Rift Valley, mursik is the revered heritage beverage of the Kalenjin community, ceremoniously shared to welcome world-conquering distance runners, seal marriage alliances, and honor passage rites. The drink is cultured within a specially dried calabash gourd (sotet) that has been scoured and internally charred using glowing embers of the indigenous Senetwet tree (African senna). This ancient technique does not merely provide the beverage with its iconic gray-flecked hue and rich woodsmoke flavor; the fine charcoal dust acts as a natural antimicrobial barrier that regulates fermentation and preserves the milk without refrigeration.
