The story
Okubao serves as the foundational daily staple of the indigenous Bubi people across the volcanic highlands of Bioko Island. Cocoyam (taro) is grown in rich volcanic ash soils and must be boiled thoroughly to deactivate irritant microscopic calcium oxalate crystals before consumption. In traditional households, the steaming tubers are transferred hot into a deep wooden mortar (*nkô*) and pounded rhythmically until they transform into a smooth, elastic mass.
