The story

Oshifima is the foundational carbohydrate that anchors daily life across the Owambo and Kavango kingdoms of northern Namibia. Served both at dawn and dusk, it is traditionally scooped from a communal wooden bowl with the right hand and indented with the thumb to hold rich sauces. Authentic Oshifima relies on Mahangu (pearl millet) milled to varying grain sizes, where the coarser bran is boiled first to create a gelatinous matrix before the fine flour is folded in to yield an elastic, resilient texture.
