The story
In the Owambo regions of northern Namibia, Oshingali is a cherished comfort dish prepared for communal feasts and honored guests alongside oshifima (millet porridge). The defining step is the manual dehulling of soaked cowpeas between stone mortars or wooden pestles, which yields an exceptionally smooth, pale-golden paste without bitter tannins. Historically, the dish is finished with cold-pressed odjove (wild marula nut oil), providing an earthy, nutty richness unique to traditional northern hearths.
