The story
In Owambo homesteads across northern Namibia, Oshikundu is brewed almost daily in clay pots to welcome guests and nourish workers returning from the fields. Unlike heavy alcoholic brews, Oshikundu is a low-alcohol or non-alcoholic probiotic staple traditionally consumed within 24 to 48 hours of brewing while its fizz is bright and crisp. The beverage relies on the enzymatic magic of sprouted sorghum malt (otombo), which hydrolyzes the gelatinized starches of boiled pearl millet into naturally sweet, fermentable sugars.
