The story
Palava sauce carries deep historical significance among the Kpelle, Bassa, and coastal Kru peoples, tracing its name to the historic palaver meetings where elders convened to settle contentious town disputes over shared feasts. The stew relies on freshly chopped jute leaves (locally termed plassas), which impart a distinctive slippery body and deep vegetal complexity. An essential traditional step involves briefly blanching the minced leaves with a tiny pinch of alkaline powder to soften tough cellulose fibers and lock in an intense emerald color before finishing in palm oil.
