The story

Tapped extensively across the rainforest belts of Nimba and Lofa counties among the Kpelle and Loma peoples, fresh palm wine is the quintessential communion drink for weddings, ancestral libations, and community palavers. The unfermented sap, locally called sweet water, begins natural wild fermentation within an hour of collection due to airborne yeasts colonising the tapping funnel. Authentic Liberian tapping preserves the tree via inflorescence tapping rather than felling, producing a clean, mildly effervescent nectar that transforms from sugary sweet at dawn to sharply alcoholic by dusk.
