Common across Chewa households of Central and Southern Malawi, Phala is traditionally prepared over open charcoal braziers (mbaula) at the crack of dawn to nourish farmers before morning field labor. While basic versions use only water and coarse maize meal (mgaiwa), family breakfasts blend fine dehulled maize flour (ufa woyera) with groundnut flour for vital plant-based protein. The critical technical secret is creating a cold slurry with a portion of the flour before introducing boiling water, which permanently prevents stubborn starch lumps from forming.
