The story
Originating among the street-side vendors in Kampala and Jinja during the late 1990s, the Rolex took its name from the rapid phonetic contraction of 'rolled eggs'. It is eaten nationwide by students, night-shift workers, and commuters at any hour of the day or night from roadside charcoal stoves. The key to street authenticity lies in pouring the raw egg mixture over a blazing hot flat-iron skillet, flash-cooking the vegetables so they retain crunch, and adhering the cooked chapati directly onto the unset top of the omelette.
