The story

In the historic quarters of Djibouti City, camel-driven press mills have traditionally crushed raw sesame seeds into the pungent, unrefined elixir known as Salid Macsar. It is ubiquitous at breakfast served alongside warm Laxoox flatbread or drizzled over spicy oven-baked poisson yéménite during Friday feasts. A subtle technical secret of authentic Djiboutian artisanal producers is tempering the raw pressed oil with nigella, fenugreek, and crushed dried alliums, which mitigates natural seed bitterness without scorching the delicate polyunsaturated fats.
