The story

Satini Reken is a celebrated Creole delicacy in the Seychelles, traditionally served at lunchtime alongside boiled cassava, fragrant yellow rice, and slow-cooked red lentils. Historically developed as a method to tenderize and preserve shark meat landed by local artisanal fishers, the recipe relies on double-squeezing the parboiled shark flesh to purge all moisture before cooking. The inclusion of freshly diced bilimbi gives the chutney its signature sharp fruit acidity, balancing the rich fried aromatics.
