The story

Sauce Gouagouassou is a celebrated culinary treasure of the Baoulé people in the dense forest and savannah transitions of central Côte d'Ivoire. Reserved for Sunday family gatherings and honor guests, it derives its deep complexity from toasted, fermented squash seed paste (gouagouassou) and bitter African eggplants (gnan-gnan).
