Sauce Gouagouassou (Eggplant, Smoked Fish, and Fermented Seed Ragout)
Rich, nutty Baoulé ragout featuring tender African eggplants, smoked river fish, and aromatic fermented seed paste.
The story
Sauce Gouagouassou is a celebrated culinary treasure of the Baoulé people in the dense forest and savannah transitions of central Côte d'Ivoire. Reserved for Sunday family gatherings and honor guests, it derives its deep complexity from toasted, fermented squash seed paste (gouagouassou) and bitter African eggplants (gnan-gnan). The technique requires gently stewing bitter local nightshades into an unctuous, red-oil-slicked broth that perfectly balances earthy bitterness, smoke, and umami.
