The story
Sauce Graine Forestière is an ancestral masterpiece of the forest peoples of Nzérékoré, Macenta, and Yomou, celebrated during communal palm harvests and major rites of passage. The stew is centered on the labor-intensive extraction of oily, velvety cream from boiled wild oil palm drupes. A key historical technique involves boiling the natural palm fruit emulsion until the water content evaporates completely, prompting a natural phase-separation where pure red oil rises to seal in the herbal notes of wild African basil.
