The story
Sauce Namidji is an everyday yet culturally foundational soup of the Dan (Yacouba) people residing in the mist-shrouded Tonkpi mountain range around Man. Eaten traditionally with red mountain rice (Riz des Montagnes), the broth pairs the restorative bitterness of wild gnangnan with slippery forest greens to cool the body after rigorous terraced farming. Technical tradition dictates that the bitter nightshades must be boiled whole in the master broth and hand-crushed separately with soumbala before returning to the pot, infusing a complex, layered bitterness without astringency.
